Spiced butternut squash stew recipe:
what you’ll need:
1 tablespoon of olive oil
1 onion diced
3 garlic cloves finely chopped
2 tablespoons of tomato paste
2 teaspoons of cumin
1 teaspoon of cinnamon
1 teaspoon of salt
1/4 teaspoon of cayenne pepper
1 pound of butternut squash chopped
1/2 cup of brown rice
2 cups of vegetable stock
1 tablespoon lemon juice
To garnish and for added flavor
plain yogurt
cilantro
sliced almonds
Directions:
1) heat the oil in a large saucepan or small stockpot over medium to high heat. Add the onion and garlic and cook, stirring occasionally, for about 5 min or until soft.
2) add tomato paste, cumin, cinnamon, salt and cayenne and give a quick stir. Add the squash and brown rice and stock bring to a boil. Reduce the heat to low and simmer and occasional stirring for 25 minutes or until squash and rice are tender.
3)Just before serving add a little lemon juice, serve hot. garnish with plain yogurt, almond slices and cilantro
